Beef with morels
Chinese dish
Ingredients for 4 people
180 g beefsteak
10 g dried Chinese morels (Mu Err)
1 red pepper
1 leek
1 large onion
1 clove garlic
150 g soy bean sprouts
60 g peas
2 tablespoons oil (preferably groundnut oil)
1 cm piece ginger
4 tablespoons soy sauce
125 ml water
1 teaspoon starch
Preparation
Wash the dried morels and soak for at least 30 minutes, changing the water several times. Drain and cut into strips.
Cut the beef into strips and the leek and onion into rings. Remove the seeds from the red pepper and cut into strips. Finely chop the ginger and garlic.
Heat the oil in a wok, stir-fry the beef and push to the side. Fry the vegetables in the wok one after the other, adding the garlic and ginger at the same time. Finally, mix everything together, add the soy sauce and water, reduce slightly and bind with the starch. The sauce should have a creamy consistency.
Serve with rice.
